Dill seed essential oil is steam distilled from the dried seeds of Anethum graveolens, common dill, a feathery annual herb native to southwest Asia and the eastern Mediterranean, now widely cultivated throughout Europe, Asia, and North America. Dill has been used as a culinary and medicinal herb for thousands of years, and its name comes from the Norse word “dilla” meaning to lull or calm.
Dill seed essential oil has a warm, fresh, herbal, and sweet aroma with a distinctly anise-like and slightly earthy quality. The main aromatic constituents include d-carvone, which is the same compound responsible for the characteristic scent of caraway and spearmint, and dillapiol. The carvone content gives dill seed oil its sweet, caraway-like character that is distinct from the lighter, more anise-like scent of dill weed oil distilled from the leaves and stems.
In aromatherapy, dill seed essential oil is used in preparations associated with digestive wellbeing and calm. It is a relatively uncommon oil in general aromatherapy but is valued by practitioners for specific applications. It blends well with other herb and spice oils including caraway, fennel, coriander, and aniseed, as well as with citrus oils like lemon and orange.
